Okay so it’s been 4 days since my wonderful picnic on the national mall. The day turned out to be perfection! The weather was beautiful and it was so nice to be able to chill and relax on a blanket outside, with people throwing footballs around you? So yes this is the land of the free and home of the brave, but I mean with all of the grass and land all over the mall you would think that some people would have the decency to throw a football away from where you’re laying and eating right? Twice a football landed around my food and I had to hear the shuffling of feet running around me as I’m trying to lay out and enjoy a romantic picnic. Ugh! For everyone who doesn’t see this as a problem, just put yourself in someone else’s shoes. Pleeasseee…especially when there is PLENTY of room nearby and you could simply just scoot over a couple of feet. 😦 Other than that…the rest of day was AMAZING!!
See how green it is? It actually worked for me this time! The first two times that I made guac and left the seeds in there it still turned brown (no laughs!) but as you see here it’s luscious and it tasted as good as it looks.
I’m much more knowledgeable about how to make the proper guacamole. Leaving in all the seeds does help it stay green. Works great when you have to make a lot for a party or small get-together. Check out my recipe below.
Now my mozzarella stuffed ranch turkey burgers also came out great.
Not to toot my own horn but they came out delicious! See my recipe below. However…they were a little cold by the time we got to the mall oops! Edible none the less! (like you’ve never eaten cold burgers)
As for the grapes…well let’s just say they didn’t stay frozen, but they were cold! I didn’t really do much research on the point behind frozen grapes or how to keep them frozen. I just sort of popped them in the freezer and took them out when it was time to go. If someone has a better way, let me know please. haha! Better luck next time.
Despite the itty bitty mishaps here and there it was still a great holiday and me and my Mr. had loads of fun.

4 Ripe Avocados
2 tomatoes or 1 can of Rotel Original Tomatoes
1/2 Cup of Cilantro
1/2 Red Onion
Garlic, Salt, Cumin to taste
Directions: Mix ingredients together until well blended (not too much or it will become watery – the chunkier the better) Place the seeds in the mix if you have leftovers.
Stuffed Turkey Burgers
1 pound of Ground Turkey Breast
Block Mozzarella (cut into small squares)
1 small yellow onion (chopped)
1 packet of Hidden Valley Ranch Salad Dressing and Seasoning Mix
Seasonings of Choice (I use Pepper, Garlic and Creole Seasoning)
Sometimes I do a little extra and add sautéed mushrooms and muenster cheese on top. 😉
Directions: In a bowl, mix together (I use my hands) ground turkey, onion, Ranch Seasoning Mix and seasonings of choice. Form into medium-sized patty shapes. Insert 3 or 4 squares of mozzarella and mold turkey meat around it. Cook on low-med heat, turning patties over until fully cooked on both sides and there is no pink in center.
